Mom's Avocado Salad Ingredients: 1 Red Onion cut into chunks, six cuts 1 Zucchini, chunked large 1 Cucumber, peeled, sliced lengthwise, seeds removed, chunked. 2 Roma tomatoes, diced 2 Avocados 2 Tbls. fresh Lemon juice (2Tbls.=1 whole lemon) 1-2 Tbls. Extra Virgin Olive Oil Salt & Pepper if desired
Directions: Cut first four ingredients as required. Place in medium bowl. Peel and chop one ripe soft avocado and drizzle EVOO and Lemon juice. Add to bowl. Stir until avocado creams & coats vegetables. Peel and cut up second avocado and gently fold into other vegetables. Do not stir. Salt & Pepper if needed. Enjoy |
