Summary The harvest is in and it's time to begin with all the wonderful salads you can make for your family and friends. This is a great one to start any summer dinner party or barbecue. I got tired of announcing to my family all of the ingredients in this salad so I just renamed it. The Cumatdo Salad (pronounced Coo maw doe) is a lot easier to say than cucumber, tomato and avocado salad, especially when everybody is asking what's for dinner and I have to keep repeating it. Patience is a virtue!

Ingredients: 1 English cucumber 1 Lb. Roma tomatoes 2 avocados, diced ½ medium red onion, sliced 2 Tbls. extra virgin olive oil or sunflower oil Juice of 1 medium lemon (about 2 Tbls.) ¼ cup (½ bunch) cilantro, chopped 1 tsp sea salt or ¾ tsp table salt ⅛ tsp black pepper
Directions: Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl. Drizzle with 2 Tbls. olive oil and 2 Tbls. lemon juice. Toss gently to combine. Just before serving, toss with 1 tsp sea salt and ⅛ tsp black pepper.
Note* If you aren't keen on cilantro, fresh dill, parsley or Italian parsley are good substitutes. |
