Ingredients: 3 cups Seville orange marmalade ⅓ cup orange juice or Chambord liqueur ⅓ cup sugar 3 Tbls. water 2 Tbls. grated orange rind ¼ tsp. ground cloves 1 pint strawberries, sliced
Directions: In the 3 Quart Sauce Pan combine the marmalade, orange juice, sugar, water, orange rind and cloves. Stir over medium heat until marmalade melts. Stir in the strawberries. Bring to a boil, stirring occasionally to prevent burning. Cook for 20 minutes or until the mixture has thickened. Cool completely.
Spoon into sterilized ½ pint jars or 1 pint jars leaving ⅛ inch headspace. Wipe the rims clean, attach the lids and tightly screw on the lids. Invert the jars for 10 seconds.
Cool on a wire rack. Store in the refrigerator for up to 3 weeks. Yields: 4 (8oz) jars |
