Ingredients: 2 pints fresh blueberries, rinsed and drained (Wild if possible) 1 cup sugar 2 6 inch sprigs fresh mint
Directions: In a 4 Qt. Sauce Pan combine the blueberries and ¼ cup of the sugar. Bring to a simmer. Reduce the heat to low, cover loosely, and simmer for 10 minutes. Using the back of a wooden spoon, crush about half of the blueberries against the bottom
and sides of the pan while they cook.
Uncover, increase the heat to medium, and cook, stirring frequently, for 5 minutes, or until
almost all of the liquid has evaporated.
Add the remaining ½ cup sugar and cook for 1 to 2 minutes or until the jam thickens.
Remove from the heat and stir in the mint. Using the back of a wooden spoon, crush the mint against the bottom and sides of the pan. Let steep for 5 minutes.
Remove and discard the mint. Pour the jam into sterilized jars, leaving ⅛ inch headspace. Tightly screw on the lids. Invert for 10 seconds.
Cool on a wire rack. Store in the refrigerator for up to 3 weeks. Yields: 3 (8oz) jars |
