Ingredients: 8 ripe Bartlett pears, about 3 Lbs., peeled, cored and chopped 1 12oz. can unsweetened grape juice concentrate 4 sprigs fresh thyme (optional)
Directions: In the 4 Quart Sauce Pan combine the pears, grape juice concentrate and 2 of the thyme sprigs,if you're using it.
Bring to a simmer and cook stirring frequently for 35 to 40 minutes or until the liquid is reduced.
Remove from the heat. Remove and discard the thyme. Add the remaining 2 thyme sprigs, if using. Using the back of a wooden spoon, press the sprigs against the bottom and sides of the pan. Let steep for 5 minutes. Remove and discard the thyme.
Pour the jam into sterilized jars, leaving ⅛ inch headspace and tightly screw on the lids. Invert the jars for 10 seconds.
Cool on a wire rack. Store in the refrigerator for up to 3 weeks. Yields: 3 (8oz) jars |
