Smothered Burritos with Green Chili Guatemalan Style
Summary
This recipe has been in our family for over 50 years.  It was given to me by the Owner of Mama Elena's Restaurant.  Everyone says it's the best, but you know how family can be....they just don't want to do the cook'n!  Lucky for them I do love to cook.  Try it out and see if your family will love it, too.

Ingredients:
1-2 Lbs. pork cut into ½'' pieces
2 cans Diced Green Chilis
1 303 can Petite Diced Tomatoes 28oz.
1 can Rotel original
1 large onion chopped small
1 Tbls. minced garlic
1 Jalapeno minced (more will add heat, but not flavor)
1 generous sprinkling of Canadian Steak Seasoning
1Tbl ground Cumin
½ tsp. Salt
½ tsp. Black pepper
1 303 can Refried Beans
1 pkg. Tortillas 8''
16 oz. Cheddar Cheese, shredded

Directions:
Add pork to the 4 Quart Slo Cooker Pot on top of stove.
Cook until pork has turn white 
*NOTE: With the lid on this will turn white quicker, just stir
occasionally. Approximately 7-10 minutes.
Pour off most of the excess juice from the pork.
Add tomatoes, Rotel, chilis, onion, garlic, jalapeño, seasonings
Simmer on Slo Cooker Base for 5 hours

In the 3 Quart Sauce Pan:
Add the refried beans
Mash down to cover bottom of pan
Cook on low with lid on top
Approximately 10 minutes
Stir occasionally to keep from hardening or burning
Add a little lard or oil drizzle if they do dry out
Yields:  10 burritos

Warm Tortillas on Square Griddle, Great Round Griddle or 10 or 12'' Skillet
*NOTE: You can also warm the tortillas in the steamer unit over the beans
while they are cooking.  Just put in however many you will need.
Fill each tortillas with a good amount of beans.
Add a little Grated Cheese to inside.
Roll up burrito.
Place seam side down.
Add Green Chili over top.
Add more Grated Cheese.
Serve up Guatemalan Style(with a little shimmy)
