2nd Place award for Terry Cornio's Grandmother's recipe, entered into the Ozark County Fair. Terry's grandmother always made these when she was a child. It was comfort food to her when visiting her grandmother. Her grandmother added fried potatoes and cornbread. She always had sliced onion to round out the meal. Terry says ''No one could make them quite like she did. The secret was to have a big spoonful of Crisco and boil the beans several hours, always keeping plenty of water in them.'' She said ''the Crisco helped soften the beans and gave them a better flavor.

Ingredients:1 Lb pinto beans, soaked 1 large Tbl. Crisco 3 slices bacon 1 Tbl. dried onion Salt and pepper to taste Water
Directions: Wash and sort beans, then place in 6 or 8 Quart Dutch Oven with lid and cover with water. Add salt. Cook covered for 4-5 hours on medium heat until soft. Add water throughout cooking if needed. Add bacon, onion and pepper after 3 hours. Beans will have a nice brown sauce when done. |
